Not all xanthan gums are the same. We bake with and sell an 80 mesh xanthan gum with a consistent viscous strength of 1500-1600 cPs . This strength provides consistent results for baking.

Add xanthan gum to salad dressings to prevent oil and vinegar from separating. 1/3 cup red wine vinegar
2/3 cup olive oil
½ tsp xanthan gum
Shake in container with lid
(option: add 1-2 T sugar )
Strawberry Protein Drink
Strawberries (1/2 cup-1 cup)
10 oz almond milk,
20 grams (1/4 cup) of Judee’s Gluten Free egg white protein,
2 tsp of xanthan gum
Combine in a blender. Add ice for thicker consistency
Crumb Cake Recipe
Ingredients needed: 9 inch cake pan,
rice flour, expandex, potato starch,
baking powder, sugar, xanthan gum,
butter, milk, eggs, vanilla, cinnamon
1. Make the flour blend. Whisk:
1 1/4 cups rice flour
2/3 cup expandex tapioca flour
2/3 cup potato starch
1 Tbsp baking powder
1 1/2 cups sugar
1 1/2 tsp xanthan gum
2. Make the crumbs. Cut 1 stick (4 oz)
butter into flour blend until pea size
3. Set aside 1/3 cup crumbs
for topping later.
4. Add to flour/butter mixture
1 1/3 cups milk
1 Tbsp vanilla
5. Blend until batter is smooth
Pour into greased 9” cake pan.
6. Add 1 tsp cinnamon to
crumbs. Stir. Spread crumbs
on top of the cake.
7. Bake at 350 degrees F for
30 min – 35 min.
